Ponti meat has a deliciously smoky taste. This is due to the small, round animal’s diet; it lives in extinct volcanoes and feeds exclusively on ash. Never heard of this extraordinary creature? That’s not surprising – the ponti is an imaginary animal invented by eating designer Marije Vogelzang. It forms part of her project "Faked Meats", which aims to redesign vegetarian food. Rather than creating more imitation meat products such as soy schnitzel and quorn burgers, it produces vegetarian meat from fantastical animals with their own unique tastes.
Vogelzang’s work doesn’t just involve design projects such as this one. The founder of the Dutch Institute of Food & Design, who is speaking at the GDI Retail Summit, uses a variety of methods to investigate the world of food – and, through food, the world.
